Explosion of Flavors at the New Japanese Restaurant in São Paulo

Su: a sensory experience that unites Japanese tradition, innovation, and haute cuisine

The sushi bar exudes a subtle aura of effortless sophistication. The gleam of the sharpened knives, the impeccable freshness of the ingredients, the itamae’s precise movements. At Su, every detail composes a sensory experience that goes beyond taste: it’s a meeting between tradition and the avant-garde, between age-old technique and creativity that defies norms. Located on the Veiga Filho floor of Shopping Pátio Higienópolis, the restaurant establishes itself as an unmissable destination for those seeking a unique gastronomic journey.

The modern and welcoming space is divided between dining room and sushi bar, accommodating up to 72 guests. Upon entering, the enveloping atmosphere transports the senses to a setting where respect for Japanese culture meets a touch of contemporary irreverence. The menu is a parade of meticulously crafted flavors, featuring top-quality ingredients and masterful execution.

To begin the experience, the snack options surprise: from Hotate Kay, with scallop tartare and x.o sauce, to the enveloping crunch of Kakiague, a sophisticated reinterpretation of deep-fried corn. The cold starters elevate the art of sashimi to another level: Carpaccio Su combines slices of salmon with crispy bits and truffle oil, while Toro Tartare & Caviar delivers an exuberant fusion of bluefin tuna and mullet roe.

The hot dishes follow the same line. Cuts of Wagyu seared on volcanic stone exude an enveloping aroma, while the Duck Magret Tataki, cured and smoked, brings a complexity of flavors that melts on the palate. The robata skewers impress with smoky flavor and unexpected touches, such as Grilled Scallop with chili jam and Octopus in black sesame sauce.

The sushi bar is a true spectacle: sushi and sashimi prepared with delicacy, from Bluefin Akami to delicate cuts of snapper and uni. The Handrolls, the open version of the temaki, appear as an invitation to unpretentious pleasure.

To sweeten the experience, surprising desserts. The Nori Cheesecake and the Sucrée Pistache explore textures and contrasts, masterfully concluding the gastronomic journey. And to accompany, the signature cocktail menu shines with creations like Yuzu Sour, Shisso Smash and Sunomono G&T, as well as selected sakes to pair with the dishes.

The house’s star attraction, however, is the Omakase. Served in an exclusive counter space, the experience offers a 15-course tasting menu, with each dish finished in front of the guest. An intimate and authentic experience where Japanese cuisine is revealed in its purest form.
