Allegria: unique gastronomy for Trancoso, specializing in fusion cuisine with dishes inspired by Asian cuisine

Opened at the end of 2022, the Allegria restaurant, located in Trancoso’s Quadrado, was founded by Letícia Turano and Leandro Oliveira – who also own Favoritto and Bonitto. Be it for the beauty of the place – which amazes tourists – each area captivates every visitor, as it evokes memories of Greek restaurants combined with the axé spirit of Bahia and a complete gastronomic experience. The venue is considered one of the favorite spots for lovers of fine cuisine paired with a setting full of creativity.

It features a menu focused on fusion cuisine and a splendid cocktail list. Super zen and cool, the atmosphere is a large garden that offers an immersion in nature. Ideal for ordering tuna, salmon, scallop and wagyu sashimi and enjoying a good cashew gin and tonic.

“O Allegria é um pedido de pausa que vem do corpo, da mente e da alma através de alimentos leves e frescos, além do cru, com várias opções também contemporâneas de pratos quentes, naturalmente combinados e associados a imagens e sensações criadas pelo contato com a natureza”, comenta Lê Turano, co-fundadora do restaurante.

Led by chef Lucas Zanette, the venue is unlike any other establishment in Trancoso and is built on the pillars of valuing the natural, molecular gastronomy and fusion cuisine – making it one of the only places in Brazil with a menu dedicated to these techniques. The menu is varied, featuring fresh and raw ingredients through dishes that use an impressive array of herbs such as cilantro, shoyu, mango, ginger, wasabi and many others. That said, the house’s menu also includes a selection of meats – like Wagyu sashimi and nigiri as well as Flat Iron on the Japanese grill – alongside contemporary cuisine dishes, catering to all its visitors’ tastes.

Unlike other restaurants in the region located in houses, Allegria proposes a complete fusion with its surroundings, as it welcomes its guests in a large garden on the Quadrado and thus ensures an experience fully connected with nature.

With the signature of renowned architect Sara Romano Afonso, the space’s décor acts as a link to the cuisine presented. Its light fixtures are made from natural fibers, like rattan and straw, 100% handcrafted by artisans from Indonesia. In addition to pieces from the Asian country, there are works by local artists. Located in a large treed garden on the Quadrado and featuring a beautiful waterfall in its space, the atmosphere – unlike anything found in town – provides an outdoor immersion, ideal for those seeking privacy and reconnection.

Allegria offers its Bar Experience, providing cocktail artistry and bar expertise for celebrations, which also brings the house’s molecular cuisine to life through drinks containing various flavored molecules, such as passion fruit and rosemary. The venue is ideal for those looking to host private events in a fully wooded environment.
